A very coarse, hard, opaque white sugar used for decorating. It does not melt when baked making it the perfect finishing touch .
when bakingPearl sugar does not melt in the oven while baking, so it can be applied to desserts either before or after baking. It is comprised of irregularly sized and shaped hard grains of coarse sugar. Adding sugar pearls to your desserts can add a pleasant texture and mouth feel.
Traditionally pearl sugar was found on Belgian waffles, but they can also be used on muffins, shortbread cookies, danishes, fruit tarts, etc.

Other words for hail sugar are nib sugar or pearl sugar.
( In Dutch we say parel suiker, hagel suiker or grein suiker. )
This sugar is used for our Jan Hagel/ Jan Hail biscuits.
